Property owners M&L Hospitality want more from their hotels. They want to buck the very Australian trend of guest sleeping in their hotel, but eating elsewhere. To achieve this, they were looking for an engaging cocktail bar concept to sit within a heritage-listing building in their Hyatt Regency Sydney property. This cocktail bar would not only service hotel guests, but stand alone as one of Sydney’s go-to cocktail bars.

With this blank canvas, The Eatery conceptualised and built everything from the ground up with its partner collaborators and the hotel team.
